This isn’t just your average mimosa. Oh no, this is thick, rich, and flavored with vanilla and champagne bubbles! There’s not much better than being handed one of these beautiful beverages at your festive Mother’s Day brunch.
This will be a huge Mother’s Day treat! (As a mummy, I know this is true!)
- 4 1/2 cups fresh squeezed orange juice
- 2 teaspoons vanilla extract
- 1 1/2 cups vanilla bean ice cream
- 1 1/2 cups champagne
Put everything except the champagne in the blender. Puree until thick and smooth. Stir in the champagne with a spoon or spatula.
