Peanut butter and chocolate were made to go together in my book. If you love

    Servings: 35

    • smooth peanut butter: ½ a 340g jar
    • unsalted butter: 1½ tablespoons
    • light brown sugar: 1½ tablespoons
    • icing sugar: ½ cup
    • Trex or Crisco (vegetable fat): 3⅓ tablespoons
    • milk chocolate: 2 cups

Step 1: Prepare 35 mini cake cases on a flat tray or mini muffin tray.

Step 2: Add the peanut butter, unsalted butter and light brown sugar into a pan over a medium heat. Continuously stir until the mixture is melted and starts to bubble. Take off the heat mixing in the icing sugar roughly about 1/3 at a time into the peanut butter mix until all stirred in. Put aside.

Step 3: Melt the broken up chocolate and Trex in the microwave at half power (well my microwave had no 50% option so set to 60%) for 30 seconds at a time, stirring in-between to stop it burning (yes chocolate will burn in the microwave). Once melted add a thin layer of chocolate to each cake case.

The peanut butter mixture should be cool enough now for you to take out of the pan, roll into a large ball and put on a plate. Put the peanut butter mix and the tray of cake cases in the fridge for 30 minutes.

After 30 minutes roll parts of the peanut butter mix into small balls and place inside each case, pushing each ball down with your finger just making sure there is just enough gap for chocolate to fall around the edge. You will be able to judge the amount needed.

Your chocolate will still be melted, at worst give a 10 second zap in the microwave. Pour a large teaspoon of chocolate over each peanut butter ball. If you do so from the middle the chocolate will flow down the sides freely.

Place in the fridge for 30-60 minutes.
