servings: 10 cheese balls
prep time: 10 minutes
total time: 10 minutes
- 4 ounce log plain goat cheese
- 1/3 cup dried cranberries
- 1/3 cup pecans
Step 1: Finely chop pecans and cranberries and place into a small bowl.
Step 2: Cut goat cheese log into 1/2 inch rounds, then cut those slices into half.
Step 3: Roll each half into a ball between your palms.
Step 4: Gently roll each goat cheese ball in the pecan/cranberry mixture until it's full coated. Press gently so the coating sticks.
Step 5: Refrigerate until ready to serve. Can be made up to 1 day in advance and kept in an airtight container in the fridge.
