What could be a more perfect, more delicious side dish than these easy-to-make Matchstick Parmesan French Fries?
The recipe for these baked fries is simple and these are healthier than your average fry, as they are oven roasted with olive oil, and not deep fried. Add a bit of Parmesan cheese (or not), and you will have one crowd pleasing treat, that will become your kids' new favourite side dish or snack.
Matchstick Parmesan French Fries Recipe
These fries are healthier because they are oven roasted with olive oil, and not deep fried.
- for the pan: olive oil
- Baby Dutch Yellow potatoes, washed and dried: 2 pounds
- kosher salt: 1 teaspoon
- finely grated Parmesan cheese: ½ cup
Step 1: Preheat the oven to 425 degrees F, and coat the bottom of a baking sheet (choose one with ½ to 1 inch sides) with a generous amount of olive oil.
Step 2: After the potatoes are washed and dried, cut them lengthwise, into thin slices (about ¼ inch thick).
Step 3: Stack the potato slices on top of each other and cut them into matchstick pieces, (again, about ¼ inch thick).
Step 4: Add the cut potatoes to the oil coated baking sheet as you are cutting them. Once they are all on the sheet, toss them with your hands to be sure all of the sides are well coated with the oil. Sprinkle with the salt and toss them one more time. When you're done they should be in an even layer on the pan.
Step 5: Place the baking sheet with the potatoes in the preheated 425 degree F oven. Roast until they're golden brown, about 20 minutes. (About halfway through the cooking process, use a flat bottomed metal spatula to flip the fries.)
Step 6: As soon as they are done, add the fries to a mixing bowl and toss them with the Parmesan cheese. Serve!
