On days when you're serving a group of family or friends it's nice to have recipes on deck for larger breakfasts. One of our favourites is the perfect and simple Mozzarella and Red Pepper Frittata recipe. This is a great standby because it's a cinch to make and has enough protein to hold everyone over until lunch. It's also a hit with the kids which is a huge relief because they need good nutrition to sustain their energy. I love them to start off the day with this healthy, hearty breakfast!
Mozzarella and Red Pepper Frittata Recipe
This mozzarella and red pepper frittata is the perfect recipe for a family breakfast!
- large eggs: 6
- shredded mozzarella: ½ cup
- butter: 1 tablespoon
- red pepper, seeded and cut into thin strips: 1
- salt and pepper: to taste
Step 1 In a large bowl beat the eggs with a pinch of salt and pepper. Set aside.
Step 2: Over medium heat add the butter to an oven-safe 12 - inch skillet and cook the peppers until softened. About 5 minutes.
Step 3: Pour the egg mixture over the peppers, and sprinkle the top with the cheese. Cook the eggs on the stovetop for about 5 minutes, or until the eggs cook on the bottom and begin to set in the middle and top.
Step 4: Turn your oven broiler to high. Cook for about 4 minutes or until the eggs are fully set. Remove from the oven and serve!
