Oven Dried Tomato-Feta Muffins Recipe
These oven dried tomato-feta muffins are bursting with flavor. Make extra!
- grape tomatoes: 3
- garlic cloves, smashed: 3
- thyme: 5 sprigs
- spelt flour (or all-purpose): 1 cup
- baking powder: ½ teaspoon salt
- black pepper: pinch
- dried oregano: 1 teaspoon
- egg: 1
- yoghurt: ¼ cup
- milk: ¼ cup + 2 tablespoons
- olive oil: ¼ cup + drizzle for tomatoes
- crumbled feta: ¼ cup
- chives, chopped: 3 tablespoons
Step 1: Preheat oven to 220 degrees. Halve tomatoes and place skin side down on parchment-lined baking sheet. Drizzle lightly with olive oil. Scatter smashed garlic cloves, and thyme sprigs, along with tomato halves. Allow to slow roast for 3 hours.
Step 2: Once the oven-dried tomatoes are ready. Preheat oven to 375 degrees.
Step 3: Roughly chop tomatoes, chives, and crumble feta.
Step 4: In a medium-sized bowl, whisk flour, baking powder, salt and pepper, and oregano together. Add the egg, yoghurt, milk, and olive oil. Mix well. Fold in the feta, tomatoes, and chives. Pour batter into muffin pan and bake for 20 minutes, or until golden brown.
