Plum Cake with Pecan Streusel Recipe
A Plum Cake with Pecan Streusel recipe is the perfect cake: healthy and delicious!
- pecans: 1 cup
- fresh plums, sliced: 2 cups
- spelt flour: 1¼ cups
- oat flour: ¼ cup
- cornmeal: ½ cup
- baking powder: 1½ teaspoons
- baking soda: ½ teaspoon
- sea salt: pinch
- butter, room temperature: 8 tablespoons
- brown sugar, divided: 1 cup
- large eggs: 2
- vanilla extract: 1 teaspoon
- lemon zest, finally grated: 2 teaspoons
- yoghurt: ½ cup
Step 1: Preheat oven to80 degrees.
Step 2: Lightly toast pecans on a medium, non-stick skillet.
Step 3: Roughly chop pecans. Mix chopped pecans with ¼ cup of sugar, and set aside.
Step 4: Thinly slice plums, and set aside.
Step 5: In a medium-sized bowl, combine spelt flour, oat flour, cornmeal, baking powder, baking soda, and sea salt.
Step 6: In a large bowl, whisk soft butter, and ¾ cup of sugar together. Add eggs, vanilla, and lemon zest, to the butter. Add flour and yoghurt to the butter mixture, and whisk until smooth.
Step 7: Gently fold sliced plums into the batter.
Step 8: Transfer cake batter into a greased 9 inch spring form pan. Sprinkle pecan-sugar mixture on top.
Step 9: Bake for about 50 minutes, or until a tooth pick comes out clean.
