Yeast Free Spelt Pizza with Goat Cheese Recipe

- salted ricotta: 1 cup
- milk: ¼ milk
- olive oil: 2 tablespoons
- egg: 1
- whole grain spelt flour: 2 cups
- baking powder: 2 teaspoons
- salt: ¾ teaspoon
- sugar: pinch
- soft goat cheese (for topping): 1 cup
- salted ricotta (for topping): 1 cup
- fresh thyme leaves (for topping): 1 cup
- sun dried tomatoes, finely chopped (for topping): ½ cup
- black pepper (for topping): 1 teaspoon
- olive oil (for topping): drizzle
- sweet potatoes, medium-sized (for topping): 2
- parmesan, finely grated (for topping): 2 cups
- arugula leaves (for topping): handful (optional)
Step 1: Prep the dough: In a small bowl mix together the wet ingredients; ricotta, milk, olive oil and egg. Whisk until well combined.
Step 2: In a larger bowl whisk the flour, baking powder, salt, and sugar together. Gradually add the ricotta mixture to the dry-ingredient bowl until a tacky, slightly wet dough forms. Cover bowl and allow to rest for 30 minutes.
Step 3: While dough rests prepare the goat cheese spread: Finely chop sun-dried tomatoes. In a small bowl mix the goat cheese, ricotta, thyme, finely chopped sun dried tomatoes, and black pepper together.
Step 4: Peel and thinly slice sweet potatoes. Toss in a bowl with a drizzle of olive oil. Set aside.
Step 5: Preheat oven to 450 degrees.
Step 6: Separate dough into 2 pieces. On a floured surface, take one piece, and gently fold it into itself, until less tacky (about 5 folds, don't over work the dough). Roll out dough until about ¼ inch thick. Transfer to baking sheet.
Step 7: Using a rubber spatula, spread half the goat cheese mixture over the dough, leaving a 1/2 inch border.
Step 8: Arrange half of the sweet potato rounds over the goat cheese spread. Brush the edges with olive oil. Bake for about 8 minutes, or until the sweet potatoes soften and the edges of the pizza dough are golden brown.
Step 9: Take out the baking sheet. Sprinkle the pizza with half of the parmesan cheese, and bake for another 2 minutes. Allow pizza to cool slightly before cutting and serving. (Optional: top with fresh arugula leaves for a peppery crunch).
Step 10: Repeat the same steps with the remaining dough, goat cheese spread, sweet potatoes, and parmesan cheese.
