Cheesy Baked Pasta with Spinach and Lemon Recipe
This cheesy baked pasta with spinach and lemon recipe bursts with light and refreshing flavors.
- rigatoni pasta: 1 pound
- baby spinach leaves: 2 cups
- olive oil: 2 tablespoons
- small onion, finely chopped: 1
- garlic, minced: 3 cloves
- all-purpose flour: ¼ cup
- milk: 2½ cups
- chicken stock: ¼ cup
- parmesan cheese, divided: 1 cup
- salt: ¾ teaspoon
- zest of lemon: 1
- black pepper: ½
- seasoned breadcrumbs: ½ cup
- unsalted butter (cut into ¼ chunks), plus more for greasing pan: 2 tablespoons
Step 1: Preheat oven to80 degrees. Grease a 13x9-inch baking pan with butter.
Step 2: Cook pasta in salted, boiling water for 8 minutes, or until al dente. turn off heat and stir spinach into pasta water to wilt. Drain pasta and spinach well and place in a large bowl.
Step 3: Heat a large nonstick skillet over medium heat. Add olive oil to the pan. Add in onion and cook until softened. Whisk in garlic and sprinkle in flour. Cook flour, whisking continuously for 1 minute. Gradually whisk in milk and wine. Cook for 5-7 minutes, whisking continuously or until sauce boils and thickens. Stir in ½ cup of cheese, salt, lemon zest and pepper.
Step 4:Pour cheese sauce over pasta and spinach and gently toss to coat. Spoon pasta mixture into prepared baking pan. Top with breadcrumbs, remaining parmesan cheese and dot with butter. Bake at80 degrees for 35 - 40 minutes. Serve warm.
