    Ingredients:

    • cake mix and accompanying ingredients: to make 24 cupcakes
    • white decorator icing: about 4 cups
    • marshmallows: 24
    • milk chocolate for melting: ½ cup
    • Rolos candies: 24
    • Thin Mints cookies (or another round fudge or chocolate covered cookie): 24
    • edible snowflake glitter: sprinkling
    • decorator rip: Wilton 1M
    • decorator tip: small round
    • pastry bags: 2

    Directions:

Step 1: Preheat your oven according to your cupcake package or recipe directions. Make the cupcake batter according to package directions.

Step 2: Prepare cupcake pans with 24 blue and silver cupcake wrappers.

Step 3: Pour batter into the cupcake wrappers, filling each one about ¾ of the way full. Bake the cupcakes according to the package or recipe directions.

Step 4: Set the cupcakes aside to cool completely.

Step 5: While the cupcakes are cooling, melt the chocolate according to the package directions.

Step 6: Dab a small bit of chocolate onto the bottom of the Rolo sweets and use that as the glue to stick the sweets to the top of the Thin Mint cookie to form the snowman’s hat.

Step 7: Use the melted chocolate to stick one hat to the top of each marshmallow. Set the hat assemblies aside to let the chocolate cool and harden.

Step 8: Add the remaining melted chocolate to a pastry bag and cut a small hole in the tip. Use the pastry bag to pipe stick arms for the snowmen about 2 inches long with two ½ inch twigs coming out of the top for hands. You’ll need at least 48 arms, plus a couple extra in case some break.

Step 9: While the chocolate is cooling, add the white decorator icing to a pastry bag with the Wilton 1M decorating tip attached to the end. Fill the bag about halfway full of icing to begin with. Reserve about ½ cup of icing to colour for the snowmen’s eyes, mouths and noses.

Step 10: Use the Wilton 1M tip to swirl the icing from the outside in on each cupcake.

Step 11: Sprinkle each cupcake liberally with edible snow glitter.

Step 12: Use a couple drops of black food colour to tint ¼ cup of the reserved icing black. Colour the other ¼ cup with a couple drops of the orange food colour.

Step 13: Use the black decorator icing and a small round decorator tip to pipe coal eyes and 3 to 4 dots of coal for a mouth.

Step 14: Use orange decorator icing and a small round decorative tip to pipe an orange carrot nose on each snowman. Gently squeeze the pastry bag while pulling away from the marshmallow to make the carrot shape.

Step 15: Place the marshmallow snowman heads on top of the decorated cupcakes and insert a chocolate arm into each side.
