Ingredients:
- garlic: 1 head (intact)
- olive oil: 1 tablespoon (plus more for drizzling garlic and bread)
- butter: 1 tablespoon
- winter squash (or pumpkin), cubed: 3 cups
- fresh thyme leaves: 2 teaspoons
- brown sugar: 1 teaspoon
- salt + pepper: to taste
- dried cranberries: ¼ cup
- crusty bread: about 10 small slices
- goat cheese spread: ½ cup
Directions:
Step 1: Preheat oven to 400 degrees.
Step 2: Remove papery, outermost layers of the garlic head and chop the top off. Place garlic head on a piece of tin foil. Lightly drizzle top with olive oil. Wrap the head of garlic in the foil, and bake for 20-30 minutes.
Step 3: Cut squash (or pumpkin) into ½ inch cubes.
Step 4: In a large saute pan heat 1 tablespoon olive oil, and 1 tablespoon butter. Over a high flame, saute squash cubes until lightly caremalized on all sides, about 10 minutes. Add brown sugar, thyme and season to taste with salt and pepper. Gently mix together.
Step 5: Once the garlic head is done roasting, set aside, and allow to cool. Place bread slices on a baking sheet and lightly drizzle with olive oil. Bake in preheated oven for 5-7 minutes, or until golden brown and toasty.
Step 6: Mix caramelized squash with roasted garlic cloves (cooled) and dried cranberries.
Step 7: Spread goat cheese evenly on bread slices. Top with squash mixture. Serve warm, or at room temperature.
