Warm Winter Salad Recipe

    Amidst all the holiday food, I know I should be eating something healthy, like a salad. But it's cold outside, and I'd rather be eating something warm and comforting (or sweets or cookies).

    I came up with this warm winter salad recipe as a happy medium. It's healthy and warm and even a little sweet. It's the perfect light meal during the holidays and on into the new year. 

    Warm Winter Salad

    Ingredients:

    • sweet potatoes: 2 medium
    • spinach: 4 large handfuls
    • brussels sprouts: 1 cup
    • pine nuts (raw, if possible): 1/2 cup
    • balsamic vinegar: 1/4 cup
    • olive oil: 1/3 cup
    • salt and pepper: a pinch of each

    Directions:

    <p>
    <strong>Step 1:&nbsp;</strong> <span style="line-height: 1.6em;">Stab sweet potatoes with a fork several times and place on the middle rack of the oven. Place a baking sheet on the bottom rack of the oven to catch any drips. Set oven to 400 &ordm;F. Bake for 1 hour, or until the sweet potatoes are tender to the point of a knife.&nbsp;</span>

    <strong>Step 2:&nbsp;</strong>Place a handful of spinach on each of 4 plates. Set aside.&nbsp;

    <strong>Step 3:&nbsp;</strong>Cut off brownish ends of brussels sprouts and carefully peel back each of the individual leaves. Arrange evenly among the plates. Sprinkle the pine nuts on the plates as well.

    <strong>Step 4:&nbsp;</strong>While the sweet potatoes are still warm, peel and cut into 3/4-inch slices. Arrange evenly amongst the salad plates.
