Fish fingers are a kids' classic, but they don't have to come frozen from a box. Believe it or not, these panko crusted fish fingers are super easy to make from scratch, and the taste cannot even compare. I kick it up a notch by using a combination of panko breadcrumbs and Parmesan cheese for a coating that's extra cripsy and super flavorful. These fish fingers are so delcious, the adults will definitely be asking to eat off of the kids' menu.
Panko and Parmesan Fish Sticks Recipe
Fish fingers, all grown up. The kids will love them, and so will you!
- vegetable oil: 2 tablespoons
- panko, toasted: 1 ½ cups
- grated Parmesan cheese: ½ cup
- salt: ¼ teaspoon
- eggs: 3
- boneless cod or halibut fillets: 1 ½ pounds, cut into ¾-inch-thick strips
Step 1: Preheat your oven to 450 degrees and oil a large baking sheet.
Step 2: In a large bowl combine panko, Parmesan cheese, and salt. In another shallow bowl, beat eggs.
Step 3: Coat the fish with the panko, dip in the beaten eggs, then recoat with the panko; transfer to a plate.
Step 4: Place fish onto prepared pan and bake, turning once until cooked through, 10 minutes. Serve immediately.
