    Ingredients:

    • tablespoons water: 2 tablespoons
    • egg yolk: 1, mixed with 1 tablespoon water
    • bananas: 5, cut in half lengthwise
    • sugar: ½ cup
    • puff pastry: 1 14-oz. package, thawed in the refrigerator
    • unsalted butter: 6 tablespoons
    • lemon juice: 1½ tablespoons

    Directions:

Step 1: Preheat oven to80C. Place one of the oven racks in the lower third portion of the oven. Line a baking sheet with a silicone liner or piece of parchment paper.

Step 2: On a lightly floured surface, roll out the puff pastry to a 10x15 inch rectangle and trim the edges so they are neat. Score a half-inch border around the edge of the puff pastry. Transfer the pastry to the prepared baking sheet, prick the pastry inside the scored border with a fork, and brush with egg wash. Place the pastry into the fridge for 10 minutes to firm up a bit.

Step 4: Rub the bananas with lemon juice. In a skillet, cook the sugar over medium heat, stirring until melted. Cook without stirring the sugar until an amber colour begins to form, about five minutes.
