    Conversation Heart Cookie Bouquet

    Surprise your Valentine with this fun & tasty arrangement!

    Servings: 1 bouquet


    • butter: ¾ cup
    • flour: 1¼ – 1½ cups plus about ¼ cup more for rolling and sprinkling
    • sugar: ½ cup
    • vanilla extract: 1 teaspoon
    • heart cookie cutter: 2 inch
    • icing sugar, sifted: 2 cups
    • meringue powder: 1 tablespoon
    • water: 3 tablespoons (more if icing isn’t flowing)
    • Wilton Colour Flow (optional): 1 tablespoon
    • pastel food colours to match Conversation Heart colours, pink, purple, green, blue: 1-2 drops of each colour
    • container: 5-6 inch
    • floral foam cut to fit snugly into container: 1 piece
    • pastel paper shreds: a few handfuls
    • floral marbles or stones: handful
    • pastry bags: 1 per icing colour
    • small round decorator tip: 1 per icing colour
    • fondue sticks, or small kabob sticks: 1 per cookie
    • ribbons to coordinate with food colours: ¼ inch


    Step 1: Preheat the oven to 325 Farenheit.

    Step 2: Make the shortbread cookie dough. Cream the butter and sugar together until smooth. Add the vanilla. Slowly add the flour until the dough forms into a crumbly ball that holds together when you knead it.


    Step 3: Roll the dough out with a rolling pin on a floured surface until it’s about 1/3 to 1/4 inch thick, and cut out your cookies with the heart cookie cutter. Collect the scraps, form them into a ball, and roll it out again to cut out more hearts. You should be able to make about 12 heart cookies (each about 2 inches) depending on the thickness of the cookies.


    Step 4: Place the cookies on a baking sheet lined with parchment paper, and insert a fondue stick into the bottom of each cookie, so that part of the stick is couched in the cookie and part is sticking out, like the end of a lollipop.


    Step 5: Bake the cookies for about 15 minutes at 325 Farenheit, or until the tops just start to turn a light golden brown.

    Step 6: When they’re done baking let the cookies cool on the pan until they’re almost at room temperature. Carefully slide the cookies from the baking sheet on the parchment paper, and let them finish cooling on a cooling rack. If you try to remove the cookies from the cookie sheet too quickly, they may fall apart, so give them several minutes to cool before moving them.

    Step 7: While the cookies are cooling prepare your container by adding floral marbles or decorative stones to the bottom of the container to help weigh it down and make it stable; otherwise the container may get top heavy when you add the cookie bouquet.


    Step 8: Cut a piece of floral foam to fit tightly into the top of the container.

    Step 9: Once the floral foam is in the container, top it with the pastel paper shreds to hide the foam. Set the container aside until you’re ready to assemble your bouquet.

    Step 10: Mix up the royal icing by combining the icing sugar, water, meringue powder, and colour flow (optional). Mix at low speed until combined. The icing should eventually flow back into place when you drizzle it.

    Step 11: Take out about 1/4 of the icing, and colour it the first colour of your conversation heart cookies. We used pink. Colour the remaining icing 1/4 each in the other colours: purple, green, and blue, by adding a few drops of food colouring and mixing until it is the desired colour.

    Step 12: Put the pink icing into a pastry bag and attach small round decorator tip. Pipe a pink outline around 2 to 3 heart cookies. Then fill in the centers with icing and let it flow into place.


    Step 13: Repeat the process with the other colours until all of the cookies have been iced.


    Step 14: Add red food colour and a couple more tablespoons of confectioners sugar to the pink icing so it no longer flows.

    Step 15: After the icing on the cookies has had a few minutes to set, use the red icing in a pastry bag with a small round piping tip attached to add conversation heart sayings to all of the cookies, like: Be Mine, Love, XOXO, Hugs, Love Me, Smile, etc.


    Step 16: Once the icing has dried, tie a ribbon into a bow around each heart stick in a coordinating colour.

    Step 17: Arrange your conversation heart cookies in the container, poking the sticks through the foam. Push them farther down in front, and leave them a little taller in the back.


    Step 18: Present your cookie bouquet to a special someone on Valentine’s Day.
