Get lucky with these adorable clover-shaped cookies! Secret ingredient: Jell-O!

    Prep Time:
    Cook time:
    Servings: 24 cookies

    • butter, room temperature: ¾ cup
    • flour, sifted: 1¼ to 1½ cups
    • green Jello (lime or watermelon): 1 3-ounce package
    • vanilla: 1 teaspoon
    • icing sugar: 4 cups
    • butter, room temperature: ½ cup
    • green Jello (same flavor as cookies): 1 3-ounce package
    • water: 6-8 teaspoons
    • green sugar sprinkles: for decorating
    • shamrock cookie cutter: 1
    • small square of wax paper: 1

Step 1: To make the cookies: Preheat the oven to 325 degrees Fahrenheit.

Step 2: Cream together the butter and Jello in a medium mixing bowl until thoroughly combined. Add the vanilla.

Step 3: Slowly add the flour until the dough forms into a crumbly ball that holds together when you knead it.

Step 4: Roll the dough out with a rolling pin on a floured surface until it’s about 1/3 to 1/4 inch thick, and cut out your cookies with the shamrock cookie cutter. Collect the scraps, form them into a ball, and roll it out again to cut out more shamrocks. You should be able to make about 10 shamrock cookies (each about 3 inches) depending on the thickness of the cookies.

Step 5: Place the cookies on a baking sheet lined with parchment paper.

Step 6: Bake the cookies at 325 degrees Fahrenheit for about 10 minutes.

Step 7: When they’re done baking let the cookies cool on the pan until they’re almost at room temperature. Carefully slide the cookies from the baking sheet on the parchment paper, and let them finish cooling on a cooling rack. The cookies are very fragile while they’re still warm; if you try to remove the cookies from the cookie sheet too quickly, they may fall apart, so give them several minutes to cool before moving them.

Step 8: While the cookies are cooling, mix up the buttercream frosting. Cream together the butter, powdered sugar, green Jello, and water until thoroughly combined.

Step 9: When the cookies have cooled, frost them using a decorator spatula.

Step 10: Let the frosted cookies set for a few minutes, then use a small square of wax paper and your fingers to smooth the icing.

Step 11: Shake green sprinkles over the top of the cookies, and shake off any excess.
