I have always loved to entertain but AK (after kids) my entertaining strategies have definitely changed. We swapped our wine parties and fancy-pants elaborate dinners for more brunches because that's what fits our lifestyle. And you know what? It's even more fabulous and fun! Brunch is one of my favourite ways to entertain because it's easy & inexpensive and a 2:00 p.m. start time is totally acceptable—perfect for those with little ones who have an early bedtime.
I love brunch, and it's the little touches that make it really special like this chocolate pecan cream cheese. That's right. I said it! Chocolate. Pecan. Cream. Cheese. I know. I know! Too much goodness in one teeny tiny recipe. It's true! This stuff is deelicious and so cool because it's made by melting up leftover chocolate. Genius, if I do say so myself. The chocolate cream cheese with pecans recipe is so easy even the kiddies can help make it. So sit back, relax, and enjoy a hot cup of joe with a bagel with this crazy-good chocolate pecan schmear.
Chocolate Pecan Cream Cheese
Serve this yummy dip up for your guests at a Mother's Day brunch!
- whipped cream cheese: 8 ounces
- leftover chocolate bar: ¼, chopped
- confectioner's sugar: 1 tablespoon
- pecans: ¼ cup, chopped
Step 1: Place chocolate in a microwavable bowl and heat on medium power until melted, stopping halfway through to stir, about 1 minute. Cool.
Step 2: Whip together cream cheese and confectioner's sugar in the bowl of a standing mixer fitted with a whisk attachment, about 1 minute.
Step 3: Add in melted chocolate and continue to whisk on high for 2 minutes until chocolate is completely incorporated and cream cheese is smooth. You may need to stop the mixer and scrape down the sides to make sure all of the chocolate gets worked in.
Step 4: Remove bowl from mixer and stir in pecans by hand. Serve alongside your favourite bagels, muffins, or toast. Enjoy!
