After the chill of the winter subsides and the warmth of the summer returns, there is something so magical about entertaining friends and family outside in the fresh summer air. It’s a universal truth that some of the best memories are made around a table with tasty food and drinks shared by all. I’m kicking off my summer with a recipe made with Hidden Valley Original Ranch Salad Dressing & Seasoning Mix…and inviting everyone to join in the fun.
These chicken ranch bites are an easy entrée to prepare and share at picnics or BBQs. Plus, one recipe makes approximately thirty cups, which means there’s enough for everyone to have one, two, three, or four of the bite-size goodness.
Chicken & Hidden Valley® Original Ranch® Bites
These crispy & creamy little bites will be the hit of your next party.
- Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix: 1 1 1-ounce package prepared to make ½ cup dressing
- mini fillo shells: 2 packages for 30 shells total
- chicken breasts: 2, cooked and diced into small cubes
- green pepper: ½, finely chopped
- red pepper: ½, finely chopped
- green onions: 4, finely chopped
- milk: 1 cup
- mayonnaise: 1 cup
- black beans: ½ cup, drained and rinsed
- shredded white Cheddar cheese: ½ cup
- shredded Monterey Jack cheese: ½ cup
- salt and pepper: to taste
- chilli powder: 1 teaspoon
Step 1: Mix the Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix according to dressing directions on the package; combine the milk and mayonnaise, mix together thoroughly, and chill in the refrigerator for at least 30 minutes.
Step 2: Preheat oven to80 degrees.
Step 3: Boil chicken on the stove.
Step 4: Chop chicken and generously salt and pepper to taste.
Step 5: Finely chop green and red peppers and green onion.
Step 6: In a medium bowl, combine the chicken, peppers, black beans, green onion, shredded cheeses, chilli powder, and ½ cup Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix. Mix thoroughly.
Step 7: Fill the mini fillo shells with the chicken mixture and arrange on a baking sheet.
Step 8: Bake for approximately 13–15 minutes or until hot.
Step 9: Set out on a platter for guests to enjoy!
Step 10: Devour.
