When back to school time rolled around this year, I was really looking forward to having all that “me time” back again, but now that we’re a month in, I’ll admit that my heart breaks just a tiny bit when I come back home after drop-off to an empty, quiet house. So what’s a mum to do?
Make a super delicious, fun after school snack, that’s what! When the backpacks come off and we all sit down to unwind with these trail mix peanut butter cookies, I get the lowdown on the happenings of the day.
Trail Mix Peanut Butter Cookie Recipe
These cookies are a sweet and satisfying after school treat my kids ask for time and time again.
- brown sugar: ¾ cup
- large eggs: 2
- creamy, salted peanut butter: 2 cups
- your favourite trail mix (see notes): 1 pound
Step 1: Preheat the oven to 325 degrees F and line two baking sheets with parchment paper. Set aside.
Step 2: Add the eggs and brown sugar to a medium-sized mixing bowl and whisk them together. Then add the peanut butter and mix with a spoon until it's smooth. Fold in the trail mix and stir until it's incorporated into the dough evenly.
Step 3: Use a 2-inch cookie scoop or a heaping tablespoon to shape the batter, adding them to parchment-lined baking sheets as you go. Gently flatten them down a bit. This batter doesn't spread, so they can be fairly close together.
Step 4: Bake in the preheated 325 degree F oven just until they no longer look wet, approximately 10 to 12 minutes.
Step 5: Let the cookies cool before removing them from the baking sheet. Use a flat-bottomed metal spatula to move them to a cooling rack or a plate.
Notes: These just happen to be gluten free and dairy free, if it matters to you!
