I’m lucky that both of my kids are pretty good when it comes to eating their dinner, however when they do go through ‘fussy’ phases there are a couple of family favourites I turn to as I know they will gobble them up. This super-speedy one pot Chicken and Tomato Pasta is always a hit whenever I make it. The boys love it because, well pasta and I love that it feeds all four of us with enough leftovers for the next day, it’s freezer-friendly and best of all I can have it on the table ready to serve in around 30 minutes.
You can serve this one pot Chicken and Tomato Pasta on it’s own (sprinkled with some extra cheese of course!) or to help it to stretch further you can serve it alongside steamed greens and vegetables. To make preparation of this recipe even easier, you can cut and prepare all of your ingredients in the morning so that you just need to add them to the saucepan that night.
Super-Speedy One Pot Chicken and Tomato Pasta
A family fave recipe that's quick, nutritious and delicious. Perfect!
- dried spiral pasta: 300 grams
- chicken breast: 400 grams
- short-cut bacon: 4 slices
- crushed garlic cloves: 2
- red capscicum: 1
- brown onion: 1
- olive oil: 1 tablespoon
- tinned crushed tomatoes: 400g
- chicken stock: 2 cups
- milk: 2 tablespoons
- mozzarella cheese: 1 cup plus extra for serving - optional
Step 1. Chop the capsicum and onion into small pieces and set aside until needed.
Step 2. Add the olive oil to a large saucepan and heat over a medium/high heat before adding the onion, capsicum and crushed garlic and cook for 3 minutes or until the onion begins to turn clear.
Step 3. In the meantime, slice the chicken breast into approximately 3cm pieces and cut the bacon into small pieces. Add these to the saucepan and stir to combine before cooking for 3 - 4 minutes or until the chicken starts to brown.
Step 4. Add the chicken stock, diced tomatoes, milk and pasta to the saucepan and stir to combine. Reduce to a medium/low heat and cover the saucepan with a tight fitting lid and cook for 10 minutes or until the pasta has cooked through - make sure you give it a good stir approximately half way through the cooking time to ensure the pasta cooks evenly.
Step 5. Remove the saucepan lid and sprinkle the mozzarella cheese over the top of the pasta and stir through. Cook for another 2 minutes uncovered over a low heat before removing from the heat to serve.
Serve with a salad and a smile.
