Yummy No-Bake Popcorn Chocolate Slice

Instead, I make this popcorn chocolate slice and I really-really think you should too. It’s packed full of good-for-you stuff like tahini, coconut and goji berries that give it a flavour that’s just delicious.

    You store the slice in the freezer and serve it cold, so it’s perfect for hot days and definitely perfect for making ahead.Keep the slices packed individually or in pairs so it’s easy to grab one or two out at a time.

    Yummy Popcorn Chocolate Slice

    A chocolate slice that is to-die-for tasty BUT healthy too. Score!

    Ingredients:

    • Dark chocolate: 100g
    • Hulled tahini: 1/4 cup
    • Coconut oil: 1/4 cup
    • Desiccated coconut: 1/4 cup
    • Goji berries: 1/4 cup
    • Popcorn: 2 & 1/2 cups

    Directions:

    Step 1: Heat the chocolate over a boiling saucepan of water until melted. Then, stir in the coconut oil and tahini. popcorn-kids-lunchbox-slice-recipe

    Step 2: In the same bowl stir through the remaining ingredients. Do give it a really good stir, you want to make sure the popcorn is really well coated with the chocolate mixture as that's what binds it.popcorn-kids-lunchbox-slice-recipe-healthy

    Step 3: Line a 22 x 12 cm slice tin with parchment paper and pop the popcorn mixture in. Fold over the paper sides and press down firmly. Make sure the mixture stays together and pressing down so it's nice and firm is the way to get it there.     Step 4: Cut it into small squares aiming for at least 12. Store it in the freezer and serve cold.

    Stacey Clare's Nutritional Tip:

    Aim for as dark as chocolate as you can with this slice. Often the darker the chocolate the less sugar it has. Also, if you don't have any goji berries on hand but you do have sultanas, pop the in. It will be just as great.
