You store the slice in the freezer and serve it cold, so it’s perfect for hot days and definitely perfect for making ahead.Keep the slices packed individually or in pairs so it’s easy to grab one or two out at a time.

A chocolate slice that is to-die-for tasty BUT healthy too. Score!

Dark chocolate: 100g
Hulled tahini: 1/4 cup
Coconut oil: 1/4 cup
Desiccated coconut: 1/4 cup
Goji berries: 1/4 cup
Popcorn: 2 & 1/2 cups
Step 1: Heat the chocolate over a boiling saucepan of water until melted. Then, stir in the coconut oil and tahini.
Step 2: In the same bowl stir through the remaining ingredients. Do give it a really good stir, you want to make sure the popcorn is really well coated with the chocolate mixture as that's what binds it.
Step 3: Line a 22 x 12 cm slice tin with parchment paper and pop the popcorn mixture in. Fold over the paper sides and press down firmly. Make sure the mixture stays together and pressing down so it's nice and firm is the way to get it there. Then pop the slice tin into the freezer to set for half an hour or until frozen.
Step 4: Cut it into small squares aiming for at least 12. Store it in the freezer and serve cold.
Stacey Clare's Nutritional Tip:
Aim for as dark as chocolate as you can with this slice. Often the darker the chocolate the less sugar it has. Also, if you don't have any goji berries on hand but you do have sultanas, pop the in. It will be just as great.
