Baked apple fritters are one of our favourite treats.Tart granny smith apples are enveloped in a cinnamon batter and then baked on a cookie sheet until golden brown. A powdered sugar glaze adds the finishing touch. These fritters make a great after-school snack or dessert.
This recipe makes a small batch of six because, if you’re like me, you have no self control when there are treats like these at your house. You can double the batch and freeze leftovers in a Ziploc bag for up to 3 months. I used plain white flour but if you wanted to you could totally use wholewheat flour.

Small Batch Baked Apple Fritters Recipe
Baked apple fritters are one of our favourite fall treats.
- all-purpose flour: 3/4 cup
- white sugar: 1/4 cup
- baking powder: 1 tsp
- salt: 1/4 tsp
- cold butter: 3 Tbsps
- vanilla: 1/2 tsp
- egg: 1 large
- Greek yoghurt: 1/3 cup
- granny smith apple: 1, chopped
- caster sugar: 1 cup
- milk: 2 Tbsps
Step 1: Preheat oven to 350 ° F. Prepare a cookie sheet by lining it with parchment paper, using a silicone baking mat or spraying with non-stick cooking spray.
Step 2: In a mixing bowl whisk together the flour, sugar, baking powder and salt. Cut in the butter with a pastry blender or a fork.
Step 3: In a small bowl whisk together the vanilla, egg and yoghurt. Add this mixture into the flour mixture and stir until just combined. Fold in the apples.
Step 4: Using a 1/4 cup measuring cup scoop a heaping portion onto the cookie sheet. Form into a large circle-like shape. Repeat 5 more times until all the batter is used.
Step 5: Bake for 13-16 minutes, until the tops start to brown.
Step 6: While the fritters are cooling, whisk together the caster sugar and milk until a glaze forms. Drizzle the glaze over each of the fritters.
Enjoy! Freeze leftovers in an airtight container for up to 3 months.
