The holidays are fast approaching and you may be thinking about or in the midst of planning festive menus. Food often is the center of the holidays and sooner than you know it, the cooking season will be in full swing. If you have kids under 12 months of age in the house, you may begin to fret about a menu tailored to their needs. There really is no reason to plan a separate menu for your baby, look at the menu you have laid out and you will see many options that are baby friendly.
One delicious holiday favourite is acorn squash and as it just so happens, acorn squash makes a great baby food and even is a wonderful first food for baby.
Acorn squash may be prepared savoury or sweet and for babies, the way you choose to prepare it is really up to you. If your little one is just beginning to eat solid foods, you may want to shy away from dusting the squash with herbs and spices. You can learn about using herbs and spices in baby's foods here. Cutting the squash into slices will enable you to prepare a small portion without spices or herbs, just for your little one, without additional mess or fuss.
Savoury Roasted Acorn Squash
- 1 acorn squash thyme sage
- salish (alder smoked salt; leave this out for babies!)
- olive oil
Step 1: Preheat the oven to 400F degrees.
Step 2: Wash the squash and then cut it half.
Step 3: Scoop out the seeds.
Step 4: Cut the halves into slices.
Step 5: Add squash to a baking dish and drizzle with olive oil Sprinkle the herbs and spices on the squash slices.
Step 6: Place baking dish in the preheated oven and roast for 40 minutes or longer.
Step 7: Squash will be finished when it is fork tender, has turned a darker orange-ish colour and the shells begin to pucker.
Puree as needed to the consistency your baby is enjoying – add other foods such as sweet potato, applesauce or even turkey!
Mix in yoghurt for a delightfully creamy experience.
Chunk the roasted squash for babies who are enjoying finger foods and feeding themselves.
