Spaghetti Squash Pizza Boats Will Leave Kids Feeling Full & Happy

These spaghetti squash pizza boats include all of your favourite pizza flavors and toppings layered over seasonal squash instead of starchy pizza dough. And the versatility can’t be beat.  My family prefers Kalamata olives, oregano and cheese but you can customize them with your own family’s favourite ingredients. Even your die-hard pizza fans will love them.

    Ingredients:

    • spaghetti squash: 1 large
    • olive oil: 1/4 cup
    • salt and pepper
    • tomato sauce: 1/2 cup
    • shredded mozzarella cheese: 1 cup
    • kalamata olives: 1/4 cup, chopped
    • dried oregano: 2 teaspoons
    • fresh basil (optional)

    Directions:

    Step 1: Preheat oven to 400 degrees F. Carefully cut the spaghetti squash in half (horizontally) and then slice in half (vertically) again to make 4 "boats".

    Step 2: Scoop out the seeds, using a spoon and place the squash pieces on a parchment or silicon mat-lined baking sheet. Drizzle about 1 tablespoon olive oil over each squash "boat." Rub in the olive oil and season with salt and pepper. Roast cut-side down for about 40 minutes or until centers are fork-tender and golden. (These steps can be done ahead of time).

    Step 3: Using a fork, scrape the insides of the squash a bit to create the strands aka "spaghetti."

    Step 4: Spoon about 2 tablespoons of tomato sauce over each squash "boat." Then follow with about 1/4 cup cheese, 1 tablespoon chopped olives and 1/4 teaspoon dried oregano for each "boat."

    Step 5: Place back in the oven for about 15-20 minutes or until the cheese is melted, and lightly golden. Allow to cool slightly before serving.
