How to Make No-Yeast Cinnamon Rolls In An Instant Pot

  • There’s nothing better than the smell of cinnamon rolls baking in the morning, except maybe the smell of coffee early in the morning. However, most cinnamon roll recipes are very involved and require time to proof the dough. Unlike traditional recipes, I learned how to make no yeast cinnamon rolls! Even better, I learned how to bake cinnamon rolls in an Instant Pot for easy baking! This small-batch recipe is so easy to make that you’ll want to bake no yeast homemade cinnamon rolls every weekend now.

    Making no yeast cinnamon rolls does change the dough texture BUT not in a bad way. They still bake properly and result in fluffy, sweet and buttery cinnamon rolls. However, I have not tried this no-yeast recipe with a traditional baking method. I have also not tried baking other types (including store-bought) cinnamon rolls in my Instant Pot, so cooking instructions may vary. I find this no-yeast cinnamon roll recipe very useful if you’re intimidated by yeast recipes. Plus, when you don’t have yeast in the house, you can still enjoy homemade cinnamon rolls!

    Topped with a simple cream cheese icing, these Instant Pot cinnamon rolls take only 25 minutes to cook and NO rising or proofing time! For best results, make sure to enjoy the cinnamon rolls fresh from the pan.

    Ingredients:

    • No Yeast Dough:
    • 1 1/4 cup milk
    • 1 tbsp butter
    • 2 1/2 cups flour (plus more for kneading)
    • 1 1/4 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • Cinnamon Filling and Topping:
    • 2 tbsp butter, melted and separated
    • 3/4 cup brown sugar, packed
    • 3 tbsp granulated white sugar
    • 2 tsp cinnamon
    • Pinch of salt
    • Icing:
    • 2 tbsp cream cheese, softened
    • 3 Tbsp milk
    • 1-1 1/2 cups caster sugar

    Directions:

    Step 1: Measure the milk in a microwave-safe measuring cup. Add butter and microwave until warm and melted.

    Step 2: In a large mixing bowl or the bowl of your stand mixer, combine the flour, sugar, baking powder, baking soda and salt. Mix to combine. 

    Step 3: Add the warm milk mixture to the dry ingredients and mix until it forms a dough ball. If using a stand mixer, mix with a dough hook. 

    Step 4: Pull out the dough (still very wet) and knead with flour for about 4-5 minutes. Once less sticky, roll into a rectangle shape approximately 9 x 12 inches.

    Step 5: Combine the brown sugar, white sugar, cinnamon and salt in a small bowl. Mix with a fork to break down lumps.

    Step 6: Brush 1 tbsp of melted butter all over the dough, then sprinkle generously with the cinnamon sugar mixture. Press lightly with your hands to secure the filling.

    Step 7: From one shorter side, roll into a log. Cut off the uneven edges and discard.

    Step 8: Spray a 6-7 inch springform pan with cooking spray and line the bottom with a piece of parchment. 

    Step 9: Cut the log into 6-7 equal sized pieces and arrange in the prepared pan. It's OK if they're squished. 

    Step 10: Melt the remaining 1 tbsp butter and lightly brush on top of the rolls. Then cover loosely with foil.

    Step 11: Place trivet in the Instant Pot. Set pan on top - there should be plenty of space around it so that it does not touch the sides of the pot. Add 2 cups of water.

    Step 12: Lock the Instant Pot lid and close the vent to seal. Set the manual high pressure to 25 minutes. When finished, naturally release the pressure or use quick release. 

    Step 13: While the rolls bake, combine softened cream cheese, milk and caster sugar in a small bowl. Mix until it forms a drizzling consistency.

    To serve, release the springform sides of the pan. Butter may pool on the top, but you can use a paper towel to soak some of it up. Serve fresh and hot, topped with a drizzle of cream cheese icing.
