Filling the lunch box is a constant challenge, but really it’s the perfect excuse to bust out the muffin tins and bake. Muffins are great to make with the kids – or even get the kids to tackle baking them alone. Muffins are virtually foolproof (golden rule: just don’t over stir!).
But your trusty muffin tin can go beyond mere muffins. Our muffin tin barely gets put away in my kitchen—I use it weekly for way more than just muffins. I use it for all kinds of foods, both sweet and savoury. The main reason foods baked in muffin tins can be so wonderful is because they automatically make individual portions. Just the ticket for school lunches. They are also useful for making a perfectly portioned egg breakfast that both kids and adults love.
