Spaghetti Squash Pizza Boats Will Leave Kids Feeling Full & Happy

spaghetti squash: 1 large
olive oil: 1/4 cup
salt and pepper
tomato sauce: 1/2 cup
shredded mozzarella cheese: 1 cup
kalamata olives: 1/4 cup, chopped
dried oregano: 2 teaspoons
fresh basil (optional)
Step 1: Preheat oven to 400 degrees F. Carefully cut the spaghetti squash in half (horizontally) and then slice in half (vertically) again to make 4 "boats".
Step 2: Scoop out the seeds, using a spoon and place the squash pieces on a parchment or silicon mat-lined baking sheet. Drizzle about 1 tablespoon olive oil over each squash "boat." Rub in the olive oil and season with salt and pepper. Roast cut-side down for about 40 minutes or until centers are fork-tender and golden. (These steps can be done ahead of time).
Step 3: Using a fork, scrape the insides of the squash a bit to create the strands aka "spaghetti."
Step 4: Spoon about 2 tablespoons of tomato sauce over each squash "boat." Then follow with about 1/4 cup cheese, 1 tablespoon chopped olives and 1/4 teaspoon dried oregano for each "boat."
Step 5: Place back in the oven for about 15-20 minutes or until the cheese is melted, and lightly golden. Allow to cool slightly before serving.
