Simplify Your Mornings: 1-Cup Apple Pancakes Recipe

    • apple, grated: 1
    • self–raising flour: 1 cup
    • ground cinnamon: 1 teaspoon
    • milk: 1 cup
    • egg: 1
    • maple syrup: ¼ cup, plus extra for serving


    Put aside most of the measuring cups, you need just 1 cup to make these yummy apple pancakes.

    Step 1: In a mixing bowl, combine the grated apple, flour and cinnamon. Stir until well combined.

    Step 2: Add the remaining ingredients and continue stirring until the batter is smooth.

    Step 3: Heat a fry pan to a medium heat, add a little butter and swirl it around the pan. Spoon the batter into the fry pan (four pancakes at a time is a good fit in my large pan). Flip the pancakes when bubbles appear on top. Remove when browned to your liking and serve warm with maple syrup.

    When you can, purchase wholemeal flour. It’s less refined and contains more vitamins. This pancake recipe also works well with spelt flour and even gluten-free flour, choose which works best for you.

    Simplify your morning:

    For an even speedier morning, you can make the batter the night before (just follow Steps 1 and 2 but leave out the grated apple) and keep covered in the fridge overnight. In the morning, bring the batter to room temperature, stir through the grated apple and proceed with Step 3.
