This Passover, I’ll be serving our Seder guests a rich flourless cake packed with chocolate chips and nuts. I made it last year and it was a total hit! This kosher chocolate hazelnut cake is so good that it’s found itself in my dessert rotation all year round.
Step 1: Preheat oven to80 degrees, and grease a 6.5 x 8.5 baking dish (or loaf pan).
Step 2: In a food processor, pulse hazelnuts until coarse meal forms.
Step 3: In a large bowl, whisk together the eggs, olive oil, honey, and vanilla extract until all of the wet ingredients are well incorporated.
Step 4: Add your dry ingredients to the wet mixture: add ground hazelnuts, almond meal, chocolate chips, and cocoa powder. Whisk together wet and dry ingredients.
Step 5: Pour batter into greased baking dish, and bake for about 30 minutes, or until a toothpick inserted into the center comes out dry but with crumbs.
