Lemonade Icebox Pie Recipe

A frozen dessert is the perfect refreshing end to a summer meal. I love ice cream and popsicles, but pies are my favourite, and frozen pies are simply decadent. This no-bake Lemonade Icebox Pie is perfect to serve on summer evenings after dinner, at a BBQ, or to wind down a patio party. It’s really quite simple to pull together and is always a huge hit; kids and adults love the bright lemony flavors.

As you’ll see by the photos, the pie is pretty light, but you can add yellow or pink food colouring if you would like it to be a brighter summery colour.

Garnish with lemon slices if desired.
