Who says you can’t grill dessert? I take every chance I can to keep the heat out of the kitchen until it’s absolutely freezing outside. One of my favourite desserts to grill is a cobbler. Topping sweet, seasonal fruit with a light and fluffy biscuit topping is a great way to end any meal.
Grilled Nectarine Cobbler
Grill up the last nectarines of summer & toss them into this yummy cobbler!
- flour: 1 cup + 1 tablespoon
- sugar: ¼ cup + 2 tablespoons + more for sprinkling
- baking powder: 2 teaspoons
- buttermilk: ½ cup, at room temperature
- unsalted butter: 4 tablespoons, melted
- nectarines: 2 pounds, sliced
Step 1: Preheat a grill to medium-high. Grease a medium cast-iron skillet. In a medium bowl, whisk together 1 cup flour, 1/4 cup sugar, and the baking powder. Mix in the buttermilk and butter until just combined.
Step 2: In another medium bowl, toss together the nectarines, remaining 1 tablespoon flour, and 2 tablespoons sugar.
Step 3: Spoon the fruit into the prepared skillet and dollop the dough over the fruit in 8 spoonfuls; sprinkle with sugar. Cover with foil and grill until the juices are bubbling and the top is golden, about 20 minutes. Let cool for 5 minutes before serving.
