It’s finally warm enough to hang out on the patio, and patio lounging calls for a cool treat. Some dark rum, ginger beer, and a splash of lime make for an absolutely refreshing Dark and Stormy. It’s one of my favourite cocktails…but my favourite cocktail in popsicle form? Even better.
Here’s my dark and stormy popsicles recipe:
Dark and Stormy Popsicles
Whip up this sweet, boozy treat to kick off the weekend.

dark rum: about ½ cup
ginger beer: 1 12-oz. bottle or about 1½ cups
limes: 1 for slicing + ¼ cup juice
popsicle mold: 1
measuring cup, 2 cups: 1
Step 1: Start by slicing and juicing your limes. Take 1 lime and slice it into thin pieces to place inside the popsicles. Next, juice enough limes to get about a quarter cup.
Step 2: Pour 1 bottle of ginger beer into your measuring cup. As bottles are generally 12 oz., this should be a cup and a half.
Step 3: Fill the measuring cup up the rest of the way with dark rum. The original recipe calls for Gosling's Black Rum, but I like to change my recipe up a bit and use whatever dark rum I have on hand. A few of my favourites are Kraken, Sailor Jerry, and Captain Morgan's dark collection.
Step 4: Mix in your lime juice. To reiterate, that recipe is 3 parts ginger beer, 1 part dark rum, and ½ part lime juice. Stir together well, and then it is time to pour into your popsicle molds.
Step 5: Start by placing the slice of lime in the popsicle mold, and then fill them up with your cocktail. Be sure to leave a little room at the top to account for expansion when freezing. Place in your freezer overnight, and enjoy!
