Trying to get your whole family to cut back on the carbs isn’t always easy. That’s why I came up with this great twist on one of my son’s traditional favourite recipes! My son loves chicken fingers and dipping sauce, but I don’t love all the ingredients in the store bought version. I came up with a gluten-free Paleo chicken fingers recipe my son loves. He even asks for seconds, and sometimes thirds! These chicken tenders are super easy to make, and you can make extra to keep some in the refrigerator for a quick and healthy after school snack. The best part is they’re also gluten free, so they’re an alternative for anyone with a gluten sensitivity. The honey mustard dipping sauce is great for dipping other things too, and it’s also wonderful to make extra to keep on hand as a salad dressing.
Paleo Gluten Free Chicken Tenders with Honey Mustard Dipping Sauce
My son loves this gluten-free spin on his favourite chicken fingers.
- chicken breasts: 4
- eggs: 3
- almond flour: 2 cups
- oregano: 1 teaspoon
- salt: ¼ teaspoon
- garlic powder: ½ teaspoon
- extra virgin olive oil: 4 tablespoons
- honey: 2 tablespoons
- mustard: 2 tablespoons
- vinegar: 1 teaspoon
Step 1: Preheat the oven to 375 degrees Fahrenheit.
Step 2: Cut the chicken breasts into 1 inch wide strips.
Step 3: Whisk the eggs together in a shallow bowl.
Step 4: Combine the almond flour, oregano, salt, and garlic powder together in another shallow bowl.
Step 5: Dredge chicken through the eggs.
Step 6: Roll the chicken in the almond flour mixture to lightly coat it.
Step 7: Place the chicken on a baking pan and bake at 375 degrees Fahrenheit for about 30 minutes, or until the chicken fingers just start to turn a light golden brown.
Step 8: While the chicken is baking, in another bowl combine the extra virgin olive oil, honey, mustard, and vinegar.
Step 9: Whisk the honey mustard ingredients together.
Step 10: Serve up the chicken fingers with the honey mustard dip.
