Meatloaf was a staple for me growing up. Mum would make all kinds of flavour combinations, but by far my favourite was when she made it with chicken mince. It was so light and lick-your-fingers delicious. She always-always wrapped her meatloaf in bacon and cooked it in the biggest tin she could find. We then had lots of leftovers for our lunchboxes all week. It was great!
Do have a go at making this chicken and bacon meatloaf. It’s delicious, different and so very easy to whip up. I adore making it and crumbling the leftovers through pasta the next night. My kids actually like it better that way.
Chicken & Bacon Meatloaf
A finger-lickin' meatloaf that is quick to make and loved by the kids.

Red onion, peeled and halved: 1
Garlic cloves, peeled: 3
Carrots, roughly chopped: 2
Large red capsicum, roughly chopped: 1
Large handful baby spinach: 1
Dried thyme: 1 tablespoon
Smoked paprika: 1 tablespoon
Quinoa flakes, nut meal or breadcrumbs: ¾ cup
Chicken mince: 1kg
Large rashers bacon: 8
S&P: to taste
Step 1: Get the oven heating up to 180°C and line a 33 x 22 cm baking tin with non-stick paper. Pop all the vegetables and herbs into a food processor and pulse until they are very finely chopped. If you don’t have a processor, use a blender or just grate them.
Now stir through the remaining ingredients. You may want to do this with your hands so that it’s really well combined.
Step 3: Line the tin with the pieces of bacon so they slightly overlap. Then firmly squish the chicken mixture in, making sure there are no holes. Pop the meatloaf in the oven for 40 minutes and once cooked, drain the juices (to drizzle on top later) and turn it out onto a tray (bacon facing up this time). Now put the meatloaf under a hot grill for 5 minutes or so to crisp up the bacon. It's done when the bacon is deliciously crispy.
Serving suggestions: Serve with some green beans and mashed potato. Then, use the leftovers for dinner tomorrow night by crumbling up the meatloaf and cooking it with a tin or two of tomatoes and some grated veg. Serve that with some spaghetti for a delicious take on traditional bolognese.
