Roasted Corn and Avocado Salsa
This guacamole alternative hits all the right notes.
- corn, husks removed: 5 ears
- red capsicum: 1
- chilli pepper: 1
- small red onion: 1
- coriander, chopped: ¼ cup packed
- avocado: 1
- olive oil: 1½ tablespoons
- lime: 1 large, juiced
- dried oregano: ¼ teaspoon
- cumin: ¼ teaspoon
- salt and pepper: to taste
Step 1: Turn your oven on to grill. Remove the corn kernels from the husks and spread on a baking sheet. Drizzle ½ tablespoon of olive oil over the corn kernels and sprinkle with a small pinch of salt. Bake in your preheated oven for about 7 minutes or until deeply golden and slightly charred. (Alternatively, you can use corn that has been charred on the grill.)
Step 2: While corn is roasting, dice the bell pepper, chilli pepper, and onion.
Step 3: Finely chop coriander and add all of the veggies to a medium-sized bowl. Once the corn kernels reach room temperature, add to the bowl. Toss with the remaining 1 tablespoon of olive oil, lime juice, ground cumin, dried oregano, salt, and freshly cracked black pepper. Toss to coat.
Step 4: Dice the avocado.
Step 5: Gently fold in the cubed avocado and adjust seasoning if needed. Serve immediately alongside your favourite chips!
