Kale is a form of cabbage and is a nutritional powerhouse.  Kale is chock full of antioxidants, such as A, C, and E, and is also very rich in calcium.  Many of the health benefits of kale are attributed to sulfur-containing phytonutrients. According to some research, these substances are thought to include some attributes that could potentially reduce the occurrence of numerous types of cancers.  There are several varieties of kale, and while some are more suited for the garden, most varieties are delicious to eat.  Kale can be steamed, roasted, sauteed,  braised, or eaten raw.
