Mozzarella
Mozzarella is a firm Italian cheese traditionally made with water buffalo’s milk. Today, however, it’s more commonly made with cow’s milk. Fresh mozzarella is a semi-soft cheese, and due to its high moisture content, it’s typically served the day it is made, but can be kept in brine for up to a week, or longer when sold in vacuum-sealed packages. So unlike most cheeses, mozzarella is not aged. Mozzarella is smooth, mild, and is slightly sweet and sour, with a distinct milk flavor. The simplest and most enjoyable way to eat fresh mozzarella is with sliced fresh tomatoes, basil leaves, and a drizzle of olive oil. Mozzarella also melts beautifully, and is therefore sometimes known as “pizza cheese.”
